Heat olive oil in a pan over medium heat, then add onion, garlic, and sour kimchi in order, sauteing to release the aromas
Add the bell pepper, cumin, paprika powder, and red pepper powder, and stir-fry for another 1-2 minutes
Add the crushed whole tomatoes with sugar, salt, and pepper, and simmer over medium-low heat for 10-15 minutes until thickened to a jam-like consistency
Make wells in the sauce, crack in 3 eggs, cover with a lid and cook on low heat for 5-7 minutes - soft-boiled is the best
Top with green onions and feta cheese, and serve with bread to complete
