Steps

  1. Blanch the white part of the green onion in boiling water for 30 seconds and drain.

  2. Combine dark soy sauce, fine red pepper powder, anchovy fish sauce, sugar, minced garlic, double-strength apple vinegar, minced cheongyang chili, sesame salt, chewy pickled radish, and minced scallion, and toss to make the seasoned pickled radish.

  3. Mix eggs, water, sugar, salt, and potato starch together and strain through a sieve.

  4. Add the minced white part of scallion and minced carrot to step 3 and mix.

  5. Pour the egg mixture into a pan, layer the green onion, mentaiko, and mayonnaise in order, roll the egg up, and brush with butter.

  6. Plate the rolled omelette alongside the seasoned pickled radish to finish.
