Crush the whole peppercorns with the back of a knife.
Coat the sirloin with salt, grapeseed oil, and crushed peppercorns in that order.
Sear in a cast iron pan over high heat for 1 minute on each side (2 minutes total), rest for 3 minutes, then slice.
Mince the green onion white parts and peeled garlic, and sauté in the same cast iron pan over medium heat until fragrant.
Separate the large and small spinach leaves, add the large leaves first and wilt.
Add thyme leaves and butter, stir-fry for 10 seconds, then once the butter melts, add heavy cream and bring to a boil.
Season with wasabi and seasoned salt, place the sliced sirloin on top to finish.
