Cut pork neck into bite-sized pieces, mix with potato starch, egg white, salt, and pepper, then adjust consistency with water.

In a pan, combine dark soy sauce, vinegar, sugar, water, lime zest, and lime juice, then bring to a boil.
Gradually add starch slurry to adjust sauce consistency.
Add blanched broccoli and mango, toss to coat and finish the sauce.
Toss the fried pork in the sauce to complete.
