Make cuts into the skin side of the pork belly.
Add grapeseed oil to a pan and sear the pork belly until golden brown.
In a pot, combine the seared pork belly, onion, garlic, peppercorns, bay leaves, 1L milk, and 2Ts doenjang. Simmer gently for 40 minutes.
Strain the broth through a fine-mesh sieve and set aside.
Cut the simmered pork belly into easy-to-eat pieces and arrange on a plate.
Drizzle with chopped green onions and 50ml of broth to finish.
