Boil 500ml of water in a pan, cook the fettuccine and fish cake together, drain through a sieve, and toss in sesame oil.
Wipe the pan dry, add grapeseed oil and minced garlic, and stir-fry over low heat until the garlic aroma rises.
Separate the white and green parts of the green onion and thinly slice the green part.
Prepare the enoki mushrooms into bite-sized pieces and slice the cheongyang chili and red chili diagonally.
Add the green onion, enoki mushroom, fettuccine, and fish cake in order to the pan with the garlic and stir-fry.
Increase to high heat, add 4Ts dark soy sauce, 6Ts mirin, and 2Ts corn syrup, and stir-fry until dry, then turn off the heat.
Add black pepper, sesame oil, toasted sesame seeds, and minced green onion and toss together.
Plate generously and garnish with a little cheongyang chili, red chili, and toasted sesame seeds to finish.
