Cut pork belly into 2-3 sections and place in a pot with green onion whites, garlic, ginger, shallot, doenjang, and whole peppercorns, then add makgeolli and water at a 2:1 ratio
Bring to a boil over high heat, skim off any foam, then reduce heat to low and simmer for 1 hour
Rest the cooked pork belly for 10 minutes, then slice into thick, bite-sized pieces
Mix ssamjang, white balsamic vinegar, honey, and scallions to make dipping sauce, plate the pork, and serve with sauce alongside
