Peel the Korean melon, finely chop the flesh, and set aside the juice that comes out separately
Separate the soft-boiled egg whites and yolks
Finely chop the smoked salmon, onion, and dill
In a bowl, combine sour cream, smoked salmon, chopped melon, egg yolks, onion, dill, green onion, and lime zest, then mix well
Add white balsamic, lime juice, and sugar to the melon juice and reduce by half in a pot, then let cool
Fill the soft-boiled egg whites with the filling mixture and drizzle the Korean melon glaze on top
Place edible flowers on top to finish
