Thaw and prep the frozen halibut, pat dry to remove moisture, and season with coin stock.
Strain one egg through a sieve and mix with parmesan cheese powder.
Coat the halibut in flour, then egg wash, then breadcrumbs.
Heat avocado oil in a pot to 170°C and fry the halibut until golden, then drain on a rack.
Thinly shred the cabbage and toss with sour cream, lemon zest, scallions, salt, and pepper.
Strain a fresh egg through a sieve to remove the watery egg white.
Add 500ml water and seasoned salt to a pot, bring to a boil, turn off heat, then gently add the egg to make a poached egg.
Melt unsalted butter in a pan and toast the burger bun until golden.
Layer lettuce, cabbage slaw, fried halibut, poached egg, and beluga caviar on the bun to serve.
