Crack 4 eggs into a bowl, remove the chalaza with scissors, and beat well.
Add 1T mirin and 4 pinches of seasoned salt to the beaten eggs and mix.
Cut the soft tofu into 3-4 pieces.
Finely dice the carrot and chives.
Add 100ml water, soft tofu, and 1T tuna sauce to a clay pot and bring to a boil.
Once boiling, pour in the egg mixture and stir in one direction to prevent sticking.
When the top starts to set in fluffy curds, add the carrot and chives.
Turn off the heat, cover with a lid, and steam for 2-3 minutes to finish.
