Remove the stems from the shiitake mushrooms, quickly rinse under running water, and immediately pat dry with a kitchen towel.
Slice the onion, slice the garlic into thin pieces, and cut the chives into 5cm lengths.
Slice the shiitake mushrooms thickly.
Heat olive oil 5T in a pan and add sliced garlic and onion and stir-fry.
When the garlic turns golden, add shiitake mushrooms, mirin 2T, and salt 5 pinches, and stir-fry on low heat.
Taste and adjust seasoning, then increase to high heat and stir-fry briskly for 30 seconds.
When the shiitake mushrooms turn golden, turn off the heat, add perilla oil 1T and chives, mix lightly, and immediately transfer to a plate.
