Pat the pork dry with a paper towel and sprinkle with salt and pepper.
Prep the vegetables into bite-sized pieces.
Heat avocado oil in a pan and sear the pork on both sides until golden, then set aside.
In the same pan, stir-fry the onion, garlic, sour kimchi, and shishito peppers, then add water, the coin broth cube, and tomato sauce and bring to a boil.
Return the seared pork to the pan and simmer for another 30 seconds. Finish with plain yogurt and green onion.
