Cut off the base of the bomdong, peel off each leaf, wash under running water, then tear or cut into bite-sized pieces.
In a mixing bowl, combine gochugaru, anchovy fish sauce, dark soy sauce, sugar, green plum syrup, minced garlic, sesame oil, and vinegar. Mix everything together in advance to make the seasoning sauce.
Pour the seasoning sauce over the bomdong and toss gently with a light hand.
Finish by drizzling sesame oil and sprinkling sesame seeds on top.
