Remove the base of zucchini and oyster mushrooms, then tear them into small pieces. Cut king oyster mushrooms in half then slice into 4-5 pieces, and slice green onion thinly.
Heat 1T cooking oil in a pan, add 1T minced garlic and green onion, and cook until the oil is well infused.
When golden, add zucchini and a pinch of salt, and cook until about halfway done.
Add all mushrooms, 1T tuna fish sauce, and 1T fermented shrimp solids, then stir-fry over low heat.
Add 1T red pepper powder, stir-fry just enough to remove the raw smell, then sprinkle sesame seeds.
