Steps

  1. Sprinkle salt and pepper on the dry-aged pork belly

  2. Cook over medium heat, rendering the fat and grilling 2 minutes per side

  3. Increase to high heat and grill 1 more minute per side to develop the Maillard reaction

  4. Slice into bite-sized pieces and plate

  5. In the same pan, sauté ginger then apple to draw out the aroma

  6. Add minced red chili pepper and all remaining ingredients, then simmer until reduced

  7. Finish the chili jam by stirring in the minced green onion
