Slice the pork jowl into 1.5-2cm thick pieces and sear in a pan until a perfect Maillard reaction forms.
Cut the onion, cabbage, and large green onion into large pieces.
In the same pan used for the pork jowl, stir-fry the dried shrimp to draw out the aroma.
Stir-fry the onion and cabbage in the pork jowl oil over medium heat for 30 seconds.
Lightly crush the garlic cloves and stir-fry with the white part of the large green onion for another 30 seconds.
Add red pepper powder and paprika powder and stir-fry, then add soy sauce and sugar and stir-fry until dry.
Add anchovy fish sauce, stir briefly, then add 500ml of water and bring to a boil.
Add ramen noodles and seasoning packet and stir-fry over high heat for 2 minutes, then add the pork jowl and cook for another 2 minutes.
Add cheongyang chili pepper, the green part of the large green onion, and minced green onion to finish.
