Pat the lamb chops dry with a kitchen towel.
Season both sides with salt and pepper, then rest at room temperature for 10-15 minutes.
Sear the lamb chops in a hot olive oil pan until the surface is deep brown on all sides.
Add butter, thyme, and rosemary, and baste the chops with the melted butter for extra flavor.
For medium-rare, cook over low heat for 1-2 more minutes; for medium, cook 3-4 more minutes, then rest the meat.
In the same pan, add olive oil and butter, then caramelize the sliced onions.
Add balsamic vinegar and palm sugar, reduce by half to create a thick glaze.
Season with salt and pepper, finish with chopped parsley.
