Thinly slice the scallions and separate the white and green parts
In a sauce bowl, combine ssamjang, mirin, sugar, cheongju, chicken stock, white part of scallions, minced garlic, and cheongyang chili and mix well
Season the sirloin with seasoned salt, sear in grapeseed oil for 2 minutes per side, and let it rest
Slice the rested steak into bite-sized pieces
Pour the prepared sauce into the same pan, reduce to one-third, then add butter and scallion greens and mix together
Spread the sauce on the plate, place the steak on top, and garnish with the remaining scallion greens to finish
