Add all broth ingredients except the katsuobushi to a pot and simmer on medium heat for 10 minutes
Turn off the heat, add katsuobushi, steep for 5 minutes, then strain and cool
Julienne the wasabi leaves; blend daikon, wasabi, and wasabi stems together in a blender and squeeze out the excess moisture
Boil soba noodles for 3 minutes, rinse thoroughly in cold water, and drain well
Toss the soba noodles with julienned wasabi leaves and plate
Top generously with the blended daikon-wasabi, furikake, and 200ml of broth to finish
