Cook the chicken thigh meat in boiling water for 15-20 minutes, remove, and shred.
Cut the onion, carrot, and celery into bite-sized pieces.
Heat olive oil in a pot and stir-fry minced garlic, onion, carrot, and celery in order over medium heat for 5 minutes.
Strain the chicken cooking broth through a sieve and add it to the pot.
Wash the potatoes with their skin on, cut into large pieces, and add to the pot.
Add thyme and simmer until the potatoes are cooked through.
Add the shredded chicken.
Season with salt and pepper and bring to a boil.
