Pat the beef with paper towels to remove blood, cut into bite-sized pieces and separate the slices
Place beef in a bowl with 2T sugar, 2T vinegar, and 2T tuna fish sauce and marinate
Trim the mushrooms, onion, and green onion
In a bowl, combine 8T dark soy sauce, 2T minced garlic, 2T mirin, 2T plum extract, 2T sesame oil, 2T corn syrup, and 1T black pepper to make the marinade sauce
Add the beef, onion, and green onion to the marinade and marinate for 30 minutes
Heat 2T cooking oil in a pan, add the marinated beef and mushrooms and stir-fry until the meat is cooked through
