Steps

  1. In a pot without the pork, combine water, star anise, garlic, peppercorns, salt, and honey, bring to a boil, then cool

  2. Add the pork collar to the cooled brine and marinate for 2 hours

  3. Rinse the brined pork collar under running water and pat dry

  4. Place the brined pork collar in an oven-safe container with olive oil, star anise, garlic, peppercorns, and bay leaves, then confit at 110°C for 2 hours

  5. After confiting, sear the skin side of the pork collar until golden, then cut into bite-sized pieces

  6. Cut the apple and onion into 0.5cm pieces

  7. Melt unsalted butter in a pan and sauté ginger, onion, then apple in order

  8. Add raisins, crushed pepper, star anise, and cinnamon stick, stir-fry, then add sherry vinegar and reduce completely

  9. Add allulose, bring to a boil, let cool, then mix in chopped green onion to complete the apple jam
