Wash the bok choy and cut the stems and leaves in half.
Slice the king oyster mushrooms into bite-sized pieces, and mince the ginger and garlic.
Boil 1L of water with salt 2T, add the stems and mushrooms first, after 30 seconds add the leaves, then after 10 seconds remove everything and drain in a colander to cool.
In a bowl, mix oyster sauce 1T, water 3T, mirin 1T, soy sauce 1T, cornstarch 0.5T, and pepper to make the sauce.
Heat vegetable oil 4T in a pan and add minced garlic 2T and minced ginger 0.5T to infuse the oil with their flavor.
Once the garlic and ginger are golden, add the bok choy and mushrooms and stir-fry until slightly translucent.
Remove the cooked bok choy to a bowl, briefly boil the sauce in the pan, then return the bok choy and mushrooms and stir-fry lightly.
