Add bone broth, onion scraps, bay leaves, whole peppercorns, and parmesan cheese rind to a pot and simmer for 15 minutes to make the broth.
Slice the onions and caramelize them in a pan with olive oil, butter, and salt over low heat until deeply caramelized.
Add enoki mushrooms to the caramelized onions and stir-fry together until well cooked.
Pour in the broth, bring to a boil, then season with dark soy sauce and fish sauce.
Transfer to an oven-safe bowl, top with baguette slices and plenty of Gruyere cheese, then bake in the oven until the cheese is golden brown.
Remove from the oven, sprinkle with dried parsley powder, and serve.
