Soak the dried kelp strips in cold water for about 30 minutes.
Add 1 tbsp of coarse salt to the soaked kelp and scrub vigorously, repeating twice.
Rinse clean in cold water 2–3 times until almost no foam appears.
For the sweet and sour dressing: mix vinegar 4, sugar 1, plum extract 1, minced garlic 0.5 tbsp, brewed soy sauce 1, anchovy fish sauce 1, sesame oil 1, ground sesame 2 and toss with the kelp strips. For the spicy and savory dressing: toss with anchovy fish sauce 2, brewed soy sauce 1, oligosaccharide syrup 1, minced garlic 1, red pepper powder 2, 2 Cheongyang chili peppers, whole sesame seeds 2, sesame oil 1.
