Steps

  1. Remove the entrails from the dried anchovies and place them in a stock bag.

  2. Add 2L water and the anchovy stock bag to a pot.

  3. Once the water boils, add the cabbage and boil for 3 minutes.

  4. Remove the cabbage, rinse in cold water, and cut into bite-sized pieces.

  5. Trim the green onion and cheongyang chili pepper.

  6. In a bowl, combine the cabbage, green onion, chili pepper, 3T doenjang, 1T red pepper powder, 1T soup soy sauce, and 1T minced garlic, then toss the cabbage.

  7. Remove the anchovy stock bag, add the seasoned cabbage, and boil thoroughly.

  8. Adjust the seasoning with fine salt to finish.
