Add 400ml of water to a dolsot (stone pot) and heat on the highest flame.
Beat eggs to measure 400ml of egg mixture, then add 1T mirin, 1T tuna fish sauce, 1 pinch of salt, 1 pinch of dasida, and 1t baking soda; mix well.
When the water in the dolsot comes to a boil, pour in the egg mixture. Stir by moving a spoon in circles along the bottom center.
Once the egg begins to set along the outer edges of the pot, reduce to low heat.
When the egg mixture is about 70% cooked, add the prepared vegetables, cover with a lid that has a deep groove, and cook on the lowest heat for 3 more minutes.
Turn off the heat, remove the lid, and add 1T of sesame oil.
