In a bowl, mix 1 tbsp of flour with 8 tbsp of water and dissolve without lumps
Beat 10 eggs and strain through a sieve to remove the chalaza
Add the flour mixture, 2 tbsp of mirin, and 4 pinches of fine salt to the strained egg mixture and mix well
Coat the pan with cooking oil and lightly wipe with a paper towel
Over low heat, pour a thin layer of egg mixture; when half cooked, gently roll. Repeat this process to build thickness
Let the finished rolled omelette cool slightly before slicing to get a clean cross-section
