Lightly toast the sunflower seeds in a dry pan.
Tear the dried filefish strips into smaller pieces and toast on low heat for 1 minute.
While still warm, add 2 tbsp mayonnaise and massage well so it soaks in thoroughly.
In a pan, combine 2 tbsp canola oil, 0.5 tbsp red pepper flakes, 1 tbsp dark soy sauce, 0.5 tbsp minced garlic, and 1 tbsp mirin, and bring to a brief simmer on low heat.
Turn off the heat, add 1 tbsp oligosaccharide syrup and 1 tbsp sesame oil, toss, then add the filefish and mix evenly to coat.
Once the seasoning is evenly coated, add the toasted sunflower seeds and toss once more to finish.
