Thaw frozen pollock submerged in water with 3T salt, 3T vinegar, and 1 shot of soju for 90 minutes.
Pat the thawed pollock thoroughly dry with paper towels.
Apply salt, black pepper, and sesame oil to the dried pollock and marinate for 10 minutes.
Beat 4 eggs and prepare pancake mix.
Coat the marinated pollock thinly with pancake mix then dip in egg wash.
Heat plenty of oil in a pan, reduce to low heat, and pan-fry while flipping 3-4 times.
