Soak the pork belly in overflowing water for 10 minutes to drain the blood
In a pot, add 1.5L water, 3T doenjang, 3T dark soy sauce, 5 dried chili peppers, 1 apple, 1 onion, 2 green onion stalks, 10 whole garlic cloves, 1T whole peppercorns and bring to a boil
When the broth is boiling vigorously, add the pork belly and pour in half a cup of soju, then boil uncovered for 5 minutes
Cover with a lid, reduce to low heat, simmer for 40 minutes, then turn off the heat and let it rest for 10 minutes
Remove the cooked pork, slice it, and wrap leftovers in foil for refrigerator storage
