Pat the beef dry with paper towels to remove blood, cut into bite-sized pieces, and separate each slice
Place the beef in a bowl and add 2T sugar, 2T vinegar, and 2T tuna fish sauce, then marinate
Prepare the mushrooms, onion, and green onion
Combine 8T dark soy sauce, 2T minced garlic, 2T mirin, 2T plum extract, 2T sesame oil, 2T starch syrup, and 1T black pepper to make the marinade
Add the beef, onion, and green onion to the marinade and let sit for 30 minutes
Heat 2T cooking oil in a pan, add the beef and mushrooms, and stir-fry until the meat is fully cooked
