Dice the bell pepper and onion, slice the carrot into half-moons, and thickly slice the button mushrooms.
In a bowl, mix 1T gochujang, 1T dark soy sauce, 0.5T sugar, 0.5T minced garlic, 4T ketchup, 1T oligosaccharide syrup, 1T curry powder, and 1T mirin to make the sauce.
Heat 3T olive oil in a pan, add the carrots first, and stir-fry until semi-transparent.
Add onion and a pinch of salt.
Add bell pepper and button mushrooms and stir-fry.
Add the sausages; once they are coated with oil, reduce to low heat, add the sauce, and stir-fry.
Turn off the heat, add 0.5T sesame oil, and it's done.
