Wash and trim the onion, green onion, and carrot.
Lightly rinse the king oyster mushrooms in water, pat dry with a kitchen towel, and cut into bite-sized pieces.
Add 2 tablespoons of cooking oil to a pan, add 1 tablespoon of minced garlic and green onion, and once the aroma rises, add the onion and julienned carrot and stir-fry for 1 minute.
Add the king oyster mushrooms, then add 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of mirin, 1/2 tablespoon of black pepper powder, and a pinch of sea salt and stir-fry.
When the mushrooms become moist, add the remaining green onion, lightly stir-fry for 1 minute, then turn off the heat and let rest for 1 minute.
Sear with a torch, then cover with a lid and steam for 1 minute to finish.
