Place the whole pork belly in a pot and add enough water to cover it. Add 0.5T salt, 1T doenjang, and 90ml soju. Bring to a boil, cover, reduce to medium heat, and simmer for 20 minutes.
Remove the boiled pork belly and let it cool at room temperature.
In a blender, combine 1 onion, 1/2 Asian pear, 1/4 pineapple, and 1 cup of water, then blend.
In a container, mix the blended marinade with 180ml dark soy sauce, 2T sugar, 45ml mirin, and 2T sesame oil.
Once the pork belly has cooled, cut it into long rectangles and skewer 5–7 pieces each. Add the pressed pork neck and skewers to the marinade and let marinate for 2 hours.
Lightly oil a pan and grill the meat. If it looks like it might burn, drizzle a little marinade or water on top as you grill.
