Bring a pot of water with 1T salt to a boil, add the rinsed pre-cooked lotus root, cover, and simmer on medium-low for 20 minutes.
Rinse the boiled lotus root in cold water to cool, then drain in a strainer.
Heat 2T cooking oil in a pan, add the lotus root and stir-fry for 3 minutes.
Add 400ml water, 5T dark soy sauce, 5T corn syrup, 2T mirin, and 0.5T red pepper powder, and simmer on medium heat until almost all moisture evaporates.
Reduce to low heat, add 1T sugar and stir-fry thoroughly, then drizzle with 1T sesame oil and sprinkle sesame seeds and toss to finish.
