Cut the onion into cubes, chop the chili peppers into large pieces, and thinly slice the whole garlic cloves.
Add 800ml water, 400ml dark soy sauce, and the sliced garlic to a pot; once it boils, remove from heat.
Add 1 cup sugar, 1 cup mirin, 1 cup maesil extract, and 2 cups vinegar, and stir well.
Pour the hot brine and 200ml soju over the onion and chili peppers, leave at room temperature for 2 hours, then refrigerate before eating.
