Soak 500g of glass noodles in cold water for 30 minutes.
Prepare the chives, onion, carrot, and meat by cutting into bite-sized pieces.
In a pan, combine water, soy sauce, dark brown sugar, and vegetable oil; bring to a boil to dissolve the sugar.
When the sauce is boiling, add the soaked noodles, then immediately add the carrot, onion, and meat. Simmer over medium heat for 5 minutes. (Use thin japchae-cut meat so it cooks through quickly.)
Remove from heat, stir in chives and sesame oil, and it's complete.
