Pre-soak the glass noodles in water ahead of time.
In a bowl, mix together 2 cups soy sauce, 1 cup mirin, 1 cup sugar, 1/3 cup green plum syrup, 1/4 cup sesame oil, 2 tbsp minced garlic, and 2 cans of pear juice until well combined.
Slice the bulgogi beef into bite-sized pieces.
Slice the green onion diagonally and prepare the onion, shiitake, and oyster mushrooms.
Trim the root ends off the enoki mushrooms and separate into individual strands.
Put the beef in the bowl and sprinkle black pepper to taste.
Add the soaked glass noodles, mushrooms, green onion, and onion; pour in the marinade sauce, toss well, and let marinate for 30 minutes.
Ladle the desired amount into an earthenware pot, add water just enough to cover all ingredients, and boil to complete the dish.
