Halve the eggplant lengthwise and cut each half into 4 pieces.
Toss with 0.5T salt, knead gently, let sit for 5 minutes, then pat dry.
Grill the eggplant on a dry pan over low heat, turning to cook both sides.
Transfer the grilled eggplant to a plate.
Mix 1T starch powder with 3T water to make a starch slurry. In the pan, add 1T cooking oil, 2T soy sauce, 1T minced garlic, 1T mirin, 0.5T sugar, and 1T starch slurry, then bring to a boil.
Add the grilled eggplant and toss until evenly coated with the sauce.
