Rinse the pork ribs under running water, add 2T sugar and 2T mirin, pour in enough water to submerge, and soak for at least 1 hour to remove the blood.
In a pot, add the ribs, water, 2T sugar, half a cup of soju, and 10 bay leaves; once it boils, cook for 10 minutes.
Rinse under cold water and trim off fatty parts with scissors.
Blend half a pear, 1 onion, 10 garlic cloves, and 100ml water in a blender until smooth.
In a pot, combine 1.5L water, the blended seasoning, 2T brown sugar, 3T starch syrup, 0.5T ginger powder, 0.5T black pepper, half a cup of soju, 150ml soy sauce, and the ribs; once it boils, cook uncovered for 20 minutes.
Add the potatoes and carrots, close the lid, and cook for another 20 minutes.
Add the green onions, onion, and cheongyang chili peppers and cook until you reach the desired broth level.
