Clean and wash the green garlic thoroughly.
Separate the stems from the leaves and cut into bite-sized pieces.
In boiling water with 1T salt, blanch the stems first for 20 seconds, add the leaves for 10 more seconds, then rinse in cold water.
Squeeze out the water from the blanched green garlic and drain in a colander.
Combine 3T gochujang, 1T anchovy fish sauce, 1T red pepper flakes, 2T plum extract, 2T oligosaccharide syrup, and 1T vinegar to make the sauce.
Add the green garlic to the sauce and mix well, then finish with sesame seeds and 0.5T sesame oil.
