Dissolve sea salt in 600ml of water in a bowl, add oysters, and gently rub to clean. Repeat 2-3 times.
Drain in a colander, then toss oysters with 1 tablespoon sesame oil in a bowl, cover with plastic wrap, and refrigerate for 20 minutes.
Julienne the radish and salt with 1/2 tablespoon sea salt for 10 minutes.
Slice the cheongyang chili peppers and green onions, then mix gochugaru 5 tbsp, plum extract 2 tbsp, apple cider vinegar 2 tbsp, fish sauce 2 tbsp, minced garlic 1 tbsp, and sugar 1 tbsp to make the seasoning sauce.
Squeeze out excess water from the salted radish, place in a bowl, add green onions and cheongyang chili peppers, add the seasoning sauce, and toss for the first time.
Add the marinated oysters and toss lightly a second time.
