Soak the glass noodles in cold water for 1 hour, or in lukewarm water for 30 minutes. Marinate the meat with 2T of cooking oil and 2T of dark soy sauce. Slice the shiitake mushrooms, cut the garlic chives into 5-7cm lengths, and julienne the carrot.
Stir-fry the marinated meat until cooked and transfer to a plate.
In a pot, combine 800ml of water, 2T of cooking oil, 7T of dark soy sauce, and 2T of dark brown sugar. Bring to a boil, then add the glass noodles. After 5 minutes, add all remaining ingredients except the garlic chives and cook for 2 more minutes.
Finally, add the garlic chives and 1T of sesame oil and mix well.
Transfer to a cool plate immediately when done. Leaving it in the pan too long will cause the noodles to stick together.
