Soak 250g of glass noodles in cold water for 1 hour.
Season the pork with 2T dark soy sauce and 1T mirin.
Prepare the onion, chives, and carrot.
Heat 2T cooking oil in a pan, stir-fry the pork, and when nearly cooked, add the onion, carrot, and 2 pinches of fine salt. Stir-fry and set aside on a plate.
In a pot, add 500ml water, 6T dark soy sauce, 2T mirin, 2T sugar, 2T cooking oil, and the soaked noodles. Stir-fry until all moisture is absorbed.
Add 2T sesame oil to coat the noodles, then add the stir-fried pork and vegetables and mix well to finish.
