Take out a box of bean sprouts, shake gently and rinse thoroughly in cold water. Finely slice 3 green onion stalks.
Add water filling only half the volume of the sprouts to a pot and bring to boil, then add the sprouts. The water level will be just right as they sink when cooked. Lift the lid and turn once per minute.
After boiling begins, wait exactly 3 minutes, turn off heat and immediately drain through a sieve, then rinse in cold water.
Squeeze out moisture thoroughly, transfer to a bowl, add seasonings and combine.
Mix the sprouts and seasonings thoroughly. Taste and add more salt if needed.
