Prep the sweet potatoes, Korean zucchini, onion, green onion, cheongyang chili pepper, tofu, and enoki mushrooms.
Make the seasoning paste: mix 3 tbsp homemade doenjang, 0.5 tbsp gochujang, 1 tbsp minced garlic, 2 tbsp gochugaru, 0.5 tbsp anchovy dasida, and a splash of water.
Heat cooking oil in a pot, add sweet potatoes, Korean zucchini, and onion, and stir-fry.
Add the doenjang seasoning paste and stir-fry together with the vegetables.
Add 1L of water and boil for 5~10 minutes.
Add enoki mushrooms, cheongyang chili pepper, green onion, tofu, and 2 pinches of salt, then bring to a brief boil.
