Pat the pork dry with a paper towel, then marinate with 1T sugar and 1T curry powder.
Mince the whole garlic, slice the onion, and cut the green onion into large pieces.
In a bowl, mix 2T gochujang, 4T red pepper powder, 2T cooking rice wine, 2T corn syrup, 1T black pepper, and 1T plum extract to make the sauce.
Heat 3T cooking oil in a pan, stir-fry minced garlic until fragrant, then add the pork and stir-fry.
Add 2T brewed soy sauce to coat the pork, then add onion, sauce, and green onion.
Turn off the heat and finish with 1T sesame oil.
