Prepare the potatoes, onion, green onion, and cheongyang chili peppers.
In a bowl, combine 2T gochujang, 2T soy sauce, 2T red pepper powder, 2T mirin, 1T minced garlic, 0.5T black pepper, and 2T water to make the seasoning sauce in advance.
Heat 1T cooking oil in a pan, and once hot, add the pork shoulder and stir-fry.
Add the potatoes and onion and stir-fry for 5 minutes until the outside of the potatoes becomes translucent.
Add the seasoning sauce and stir-fry once more.
Once sufficiently stir-fried, add 400ml water and simmer for about 3 minutes from the boiling point.
Add the green onion and cheongyang chili pepper and simmer for 2 more minutes to finish.
