Peel the old cucumber with a peeler, cut in half lengthwise, remove the seeds, and rinse.
Slice the cucumber thickly, then place in a bowl with 1T fine salt and 3T corn syrup and marinate for 20 minutes.
Mince the cheongyang chili pepper.
Do not rinse the salted cucumber — just drain the liquid that has formed.
In a bowl, combine the salted cucumber, minced chili pepper, 0.5T minced garlic, 1T doenjang, 0.5T anchovy fish sauce, 1T red pepper powder, 0.5T sugar, and 1T sesame oil, and toss to finish.
